Spaghetti Squash

Serves: 4-6

Ingredients
1 large spaghetti squash (halved length wise) clean out all the seeds from the center of the squash
2 tbsp olive oil
1 tbsp chopped garlic
1/2 tsp salt
1/4 tsp black pepper
1 (16 ounce) jar of marinara sauce

Directions:
Before baking the squash take out all of the seeds from the center of the squash then place spaghetti squash on large baking sheet. Drizzle 1 tbsp olive oil on both sides of the squash; salt and pepper both sides as well.  Place spaghetti squash cut side down and roast in a 400 degree oven for about 40 minutes. Prick the squash with a fork, if it goes in easily the squash is done. Take it out of the oven and once cool to the touch, using a fork scrape out the squash into a bowl (it will look like spaghetti).
In a medium size sauté pan add the remaining tbsp of olive oil with garlic and sauté for about 10 minutes. Then add your marinara sauce stirring to incorporate the squash with the sauce.
