Roasted Acorn Squash
Serves: 4-6
Ingredients
2 medium acorn squash, cut in half center seeds scooped out
1/2 tsp salt
1/4 tsp black pepper
2 tsp light olive oil
2 tbs pure maple syrup
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Directions:
Preheat oven to 400 degrees. Line a large rimmed baking sheet lined with parchment paper. The parchment paper makes for an easy cleanup. Carefully cut squash in half from the tip through the stem. Once the squash is cut in half, scoop out the seeds and strings with a large spoon, place on baking sheet cut side up. Brush the squash with olive oil. Sprinkle the squash with salt, pepper, cinnamon and nutmeg. Drizzle with maple syrup and bake for 30 minutes. To serve place in a dish and drizzle with a little extra maple syrup if desired. Perfect for a fall side dish.
