Peanut Butter Bars
Makes 10 bars
Ingredients
✓ 1/2 cup all natural peanut butter
✓ 2 tbsp light olive oil
✓ 1/3 cup honey
✓ 1tsp vanilla extract
✓ 1 cup rolled oats (I use Quaker Oats)
✓ 1 tbsp chia seeds
✓ 2 tbsp dark chocolate chips plus 1 tsp light olive oil
✓ 1/3 cut chopped nuts (no salt) I use walnuts, but any nut will do
✓ sea salt for sprinkling
✓ 1/2 cup all natural peanut butter
✓ 2 tbsp light olive oil
✓ 1/3 cup honey
✓ 1tsp vanilla extract
✓ 1 cup rolled oats (I use Quaker Oats)
✓ 1 tbsp chia seeds
✓ 2 tbsp dark chocolate chips plus 1 tsp light olive oil
✓ 1/3 cut chopped nuts (no salt) I use walnuts, but any nut will do
✓ sea salt for sprinkling
Directions:
Heat peanut butter, light olive oil, honey and vanilla in a saucepan over low heat and mix together until well blended and smooth. Remove from heat and transfer to a large mixing bowl, add oats and nuts and place in a 8×4 inch loaf pan lined with parchment paper. Place in fridge for 1 hour before removing from the loaf pan. Cut into 10 squares (depending on how large you make the squares).
Can be stored in fridge for 2 weeks in an air tight container.
