Blueberry Oatmeal Muffins

Blueberry Oatmeal Muffins

Makes 12 to 16 muffins
Ingredients
  1 cup unsweetened almond milk
  1 cup old fashioned whole rolled oats
  1 and 1/4 cups cassava flour measured correctly
  1/2 tsp baking powder
  1/2 tsp baking soda
  1/2 tsp ground cinnamon
  1/2 tsp salt
  1/2 cup unsweetened applesauce
  1/2 cup real maple syrup
  1 large egg at room temperature
  1 tsp pure valilla extract
  1 cup fresh blueberries
Directions:
Combine milk and oats. Set aside for 20 minutes so the oats puff up. Preheat oven to 425 degrees and spray a muffin pan with nonstick spray or use cupcake liners. In a seperate bowl wisk the flour, baking powder, baking soda, cinnamon and salt. In another bowl combine the applesauce, syrup, egg and vanilla extract. Pour the wet ingredients into the dry ingredients, stir a few times and add the wet oats and blueberries. Fold everything together gently until combined. Spoon into the muffin liners and bake 5 minutes at 425 degrees and the reduce oven to 350 degrees and bake for additional 15 minutes. Allow muffins to cool before removing them from the pan.
