
Split Pea Soup
Serves: 4-6
Ingredients
2 cups split peas
6 cups water
2 tbsp olive oil
2 small carrots, chopped
1 celery stalk, chopped
1 small onion, chopped
1 tbsp fresh, chopped or dried parsley
1 tsp salt
1/2 tsp pepper
Directions:
In a large stock pot sauté carrots, celery, parsley and onion in olive oil. Once soft, add split peas and sauté until covered with olive oil. Add water, salt and pepper to the split peas, bring to a boil and then to a low simmer. Cook for 45 minutes to an hour constantly stiring to avoid clumps. If too thick you can add water a little at a time. Once soup is done remove from heat and blend with an immersion blender. You can blend the soup as smooth as you would like. Garnish with parsley and serve immediately.
